Bhatura

Ingredients

  • 200 gmsmaida (plain flour)
  • 300 gmspotatoes, cooked and mashed
  • to tastesalt
  • as neededwater
  • for deep fryingoil

Instructions

  1. Mix the cooked and mashed potatoes with the maida and salt; add a little water if needed.
  2. Massage the atta well — like chapati atta.
  3. Let it rest for at least 30 minutes.
  4. Roll out each puri a little thick (less than 1/4 inch), about as big as your palm.
  5. Fry in hot oil on high to medium flame until puffed and golden.
  6. Eat hot with pickle, lime and chopped onion rings.
