Coconut Chutney

Ingredients

  • as neededfresh coconut, brown skin removed from behind
  • a littlegreen chilli
  • to tastesalt
  • a 1/4 inch pieceginger
  • 2 flakesgarlic
  • a littlecurry leaves
  • a very little (optional)tamarind

Bagar (tempering)

  • a littlemustard seeds
  • a littleurad dal
  • 1dry spicy chilli
  • a fewcurry leaves
  • a littlehing (asafoetida)

Instructions

  1. Grind the fresh coconut, green chilli, salt, ginger, garlic, curry leaves, and a very little tamarind (if using) together to a chutney consistency.
  2. Heat a little oil and prepare the bagar: add mustard seeds, urad dal, the dry chilli, curry leaves and a little hing — let everything splutter.
  3. Pour the bagar over the chutney and mix.
