Lady Fingers

Ingredients

  • 1/4 kglady fingers (okra), cut lengthwise
  • 1 tspmustard seeds
  • 3/4 tspjeera (cumin)
  • 1 mediumonion, chopped
  • 1green chilli, slit
  • 1/4 tsphaldi (turmeric) powder
  • 1/2 tspchilli powder
  • 1 1/4 tbspcoriander powder
  • 1/2 to 3/4 tspamchur (dry mango) powder
  • to tastetomatoes, chopped
  • to tastesalt
  • for cookingoil

Instructions

  1. Heat oil and bagar the mustard seeds — let them crackle.
  2. Add the jeera, then the chopped onion and slit green chilli; fry well till light brown.
  3. Add all the powdered masalas (haldi, chilli, coriander, amchur) and fry.
  4. Add the lady fingers, stir and fry till the masala coats them.
  5. Cover and cook — don't add water; keep stirring occasionally until done.
  6. Add the chopped tomatoes and simmer for 2 minutes.
  7. Done.
