Ingredients
- 1/4 kglady fingers (okra), cut lengthwise
- 1 tspmustard seeds
- 3/4 tspjeera (cumin)
- 1 mediumonion, chopped
- 1green chilli, slit
- 1/4 tsphaldi (turmeric) powder
- 1/2 tspchilli powder
- 1 1/4 tbspcoriander powder
- 1/2 to 3/4 tspamchur (dry mango) powder
- to tastetomatoes, chopped
- to tastesalt
- for cookingoil
Instructions
- Heat oil and bagar the mustard seeds — let them crackle.
- Add the jeera, then the chopped onion and slit green chilli; fry well till light brown.
- Add all the powdered masalas (haldi, chilli, coriander, amchur) and fry.
- Add the lady fingers, stir and fry till the masala coats them.
- Cover and cook — don't add water; keep stirring occasionally until done.
- Add the chopped tomatoes and simmer for 2 minutes.
- Done.
