Idli

Ingredients

  • 2 measuresraw rice
  • 1 measureurad dal
  • a handfulpoha
  • 1 tspsugar (optional)
  • to tastesalt

Instructions

  1. Soak the rice and dal separately for about 10 to 12 hours.
  2. Grind the rice together with the washed poha — add water and grind into a fine rawa, like the finest sooji.
  3. Grind the urad dal to the finest paste; keep grinding at least three times, adding a little water each time so it grinds fine.
  4. Mix the dal, rice, salt and sugar together very well with an electric egg beater.
  5. The batter should not be too thick — it should be a pouring consistency.
  6. Cover with a lid and leave it to ferment till the next morning.
