Ingredients
- 1chicken
- for fryingoil
- 1 smallcapsicum, sliced
- 1onion, quartered
- 1carrot, sliced
- 2 slicespineapple, cut into small pieces
- 1 tbspsoya sauce
- 4 tbstomato sauce
- 2 tbspsugar
- 1 1/2 tbspvinegar
- 1/2 cupstock or chicken
- 1spring onion, chopped
- for thickeningcornflour mixture
For Batter
- 2eggs, lightly beaten
- 3-4 tbspcornflour
- to tastesalt and pepper
Instructions
- Mix the batter ingredients together to make a smooth batter.
- Salt and dip the chicken pieces in the batter and fry. Set aside.
- For sauce: heat 4 tbsp oil, add the capsicum, onion, carrot, and pineapple bits. Stir fry for 3 minutes.
- Add soya sauce, tomato sauce, salt, pepper, sugar and vinegar. Stir fry for a few minutes.
- Add stock and boil.
- Lower heat and gently stir in the cornflour mixture till sauce thickens.
- Add the fried chicken pieces, simmer for 1 minute, and serve with fried rice.
