Sweet and Sour Chicken to review

Ingredients

  • 1chicken
  • for fryingoil
  • 1 smallcapsicum, sliced
  • 1onion, quartered
  • 1carrot, sliced
  • 2 slicespineapple, cut into small pieces
  • 1 tbspsoya sauce
  • 4 tbstomato sauce
  • 2 tbspsugar
  • 1 1/2 tbspvinegar
  • 1/2 cupstock or chicken
  • 1spring onion, chopped
  • for thickeningcornflour mixture

For Batter

  • 2eggs, lightly beaten
  • 3-4 tbspcornflour
  • to tastesalt and pepper

Instructions

  1. Mix the batter ingredients together to make a smooth batter.
  2. Salt and dip the chicken pieces in the batter and fry. Set aside.
  3. For sauce: heat 4 tbsp oil, add the capsicum, onion, carrot, and pineapple bits. Stir fry for 3 minutes.
  4. Add soya sauce, tomato sauce, salt, pepper, sugar and vinegar. Stir fry for a few minutes.
  5. Add stock and boil.
  6. Lower heat and gently stir in the cornflour mixture till sauce thickens.
  7. Add the fried chicken pieces, simmer for 1 minute, and serve with fried rice.
