Coconut Khudi & Kadia Chicken (printed email from Zelia) to review
Ingredients
- 1 pcsdry coconut, cut into fine pcs
- 2green chillies
- 1 smallonion, cut fine
- 4 clovesgarlic
- 1 pcginger
- a littlefresh coriander
- 1 pcdanchuni (cinnamon)
- 2cloves
- 1elaichi (cardamom)
- to tasteghee
- 1/2 tblsbottle masala
- to tastesalt
- to tastechicken or mutton
- as neededpotatoes, carrots and greenpeas
- to tastesour lime juice
Instructions
- Coconut Khudi: Roast coconut, green chillies and onion on a slow fire. Add 4 cloves of garlic, 1 pc of ginger, little fresh coriander, 1 pc danchuni, 2 cloves, 1 elaichi. Grind all into a paste.
- Take little ghee, bagar the masala for 2 minutes, then add 1/2 tbls of bottle masala, little salt, and let it fry.
- Then add chicken or mutton; add sufficient water and let it cook.
- Finally add potatoes, carrots and greenpeas. When cooked, lastly add sour lime juice.
- For ball curry, same masala — to prepare balls, take mince, 1/2 tsp of spice powder, little salt; make balls and let them be formed in the fry pan with little oil.
- Kadia Chicken: 1/2 kg chick, 3-4 green chillies, 1 inch ginger, 4-5 cloves of garlic — grind all to a paste. Cut 3-4 onions fine, fry till light brown.
- Add 2 tsp coriander pwd, 1/2 tsp jeera pwd, 1/4 tsp haldi pwd, 1 1/2 tsp chilli pwd, 2 tsp shop garam masala pwd, 1 cup curds, 2 tblsspoons of almond pwd, 3 tomatoes cut fine, 1 tsp kalanji (onion seeds), 1/2 whole jeera, 3 whole red chillies, 1 tbsp kasturi methi.
- Take sufficient oil, fry onions, keep aside. Fry chick with little oil & keep aside.
- In the same oil, bagar kalanji, jeera & red chillies. Add ground paste, put the two masalas & let it fry for 2 mins.
- Add tomatoes till soft, add fried onions, 1 cup beaten curds, stir till oil separates.
- Add fried chick, let it mix well on slow fire, add tandoori color, & 1-2 cups of water. Let it cook till gravy is thick.
- Note added by hand: 1 1/2 tbsp sugar, 1 cup of water, add some kasturi methi.
