Fugias to review

Ingredients

  • 1 kgmaida (plain flour)
  • 2full eggs
  • to tastesalt
  • as per sweetnesssugar
  • 2 1/2 tspghee, melted
  • as neededlukewarm water for massaging

Yeast water

  • 7-8 tbspwarm water
  • 1/2 tbspsugar (dissolved)
  • 1 tspyeast

Instructions

  1. Prepare the yeast water: dissolve sugar in warm water, add yeast and dissolve. Keep aside.
  2. Strain the maida and add eggs, salt, sugar, and melted ghee.
  3. Massage well with the yeast water, and add more water as required.
  4. See that the consistency is not too tight or not too fine.
  5. Massage atta freely with your hand.

Fugias are a Goan fried yeasted bread, similar to puri. The phrase 'Massage atta' is from the original handwriting.
