Burta (Brinjal Bharta) to review

Ingredients

  • 2 largeblack brinjal (eggplant)
  • 1 bigonion, minced
  • 2 mediumtomatoes, blanched and sliced
  • 4green chillies, minced
  • handfulsliced coriander leaves
  • 1 tspground cumin seeds
  • dashpepper powder
  • to tastesalt and chilli powder
  • 2 tbspghee

Instructions

  1. Hold the brinjal with the help of tongs over the gas flame and cook over a low fire till the skin turns completely black and wrinkled.
  2. Peel the brinjal and mash to a pulp.
  3. Heat 2 tbsp ghee, put in onion and chillies and cook till soft.
  4. Put in tomatoes and spice and cook again till tomatoes turn soft.
  5. Mix in the brinjals, cook till the mixture turns quite dry.
  6. Set it. Serve hot, garnish with chopped coriander.
